Applesauce Oatmeal Muffins

Ingredients
1 c. old fashioned oats1 c. unsweetened applesauce1/2 c. skim milk2 egg whites, beaten2 tbsp ground flax seed2 tbsp + 1 tsp canola oil1 tbsp baking powder1/2 tsp baking soda1 tsp cinnamon1/2 tsp nutmeg3/4 c. whole wheat flour1/4 c. dried cranberries1/4 c. dried cherries1/4 c. raisins
Directions
1. Preheat oven to 375. Line muffin pan with liners.

2. In a medium bowl, combine first 6 ingredients. In another medium bowl, combine remaining ingredients and make a well in the center. Pour wet mixture into dry, and stir just until moistened.

3. Fill muffing cups 2/3 full and bake for 15-20 mins.
