PESTO SHRIMP WITH ARTICHOKES

Ingredients
Shrimp, cooked, 9 oz (remove)*Knorr - Pesto Sauce Mix, 10 tsp (remove)Water, tap, .5 cup (8 fl oz) (remove)*Artichokes, canned packed in water, 1 cup (remove)*Barilla Linguine, 8 oz (remove)*Primo Olio Extra Vergine de Oliva (Extra Virgin Olive Oil), 5 tbsp (remove)

PREPARATION

In 12-inch nonstick skillet, heat 1 tablespoon Olive Oil over medium-high heat and cook shrimp, stirring occasionally, until shrimp turn pink. Remove shrimp and keep warm.

In same skillet, add remaining 1/4 cup Olive Oil and KnorrŪ Pesto sauce mix blended with water. Bring to a boil over high heat, stirring frequently. Reduce heat to low and simmer uncovered, stirring occasionally, 4 minutes. Add artichokes and return shrimp to skillet; heat through.

In large serving bowl, toss shrimp mixture with hot linguine.

    Loved this. Even my hubby who never eats shrimp unless its deep fried, came back for seconds. I did saute the shrimp with a little garlic. Next time, I'll add more. - 10/22/10
