1 package Couscous (3 cups prepared)1/4 cup Rice Wine Vinegar1/4 cup Light Mayo1 Tbsp. Curry Powder1 teas. Garlic Powder1 teas. Dry MustardSalt & Pepper to taste2 Tbsp. Capers4 Hearts of Palm (chopped)15 oz. Marinated Artichoke Hearts (drained & copped)1 Red Bell Pepper (chopped)6 Green Onions (chopped)1/2 cup Green Olives (chopped)
Prepare couscous according to package directions. In a medium bowl, whisk together vinegar, mayo, curry powder, dry mustard, garlic powder, salt, & pepper. Combine prepared couscous with vinegar/mayo mixture. Add remaining ingredients and stir well. Refrigerate for 4-5 hours to allow flavors to blend. Enjoy!
