Allie's Spanish Omelet

1/4 c. olive oil4 potatoes, diced small1/2 onion, diced4 eggs, scrambled in large bowelChopped parselyGarlic powder (to taste)
In a large skillet, heat oil over medium heat. Add potatoes and saute til just soft, add onions and cook til both are tender. Drain any extra oil, combine potatoes and onion into scrambled eggs. Add parsley and garlic powder. Add a Tbsp of olive oil to pan and heat. Pour mixture in to pan. Cook til bottom of omelet is light brown, about 4-5 min. Using a plate, cover frying pan and flip the omelet over onto plate. Immediately slip the uncooked side back into the pan, cook another 4-5 min. Remove from heat, place on plate, cut in wedges and top with Olive Tapenade.
