Broccoli & Tofu Peanut Curry with Rice Noodles

Ingredients
8 oz. rice noodles1 T canola oil1 block extra firm tofu, cubed4 c. broccoli, chopped2 t. minced ginger2 t. minced garlicSauce:1 can light coconut milk2 T. curry powder1 t. sugar4 T. soy sauce4 T. natural peanut butter
Directions
Cook rice noodles according to package.

Whisk together all sauce ingredients & set aside.

Steam broccoli.

Stir fry tofu in oil. When tofu is done, add ginger & garlic & stir fry for 30 seconds.

Stir in sauce & cook until heated through. The tofu will absorb some of the sauce.

Stir in noodles & broccoli.
