Fresh Tomato Basil Soup

Ingredients
4 cups chopped tomatoes1 chopped medium sized onion 5 cloves roasted garlic (or 3 cloves raw garlic)1 chopped small bell pepper (seeds optional)2 tbsp fresh basil2 cups chicken broth2 Tbsp butter2 Tbsp flour1/2 cup fat free half & half1 tsp salt
Directions
In a pot, sautee onions and garlic until onions are soft. Add chicken broth, tomatoes, bell pepper, and basil, simmer for about 20 minutes. Let cool a little before pouring into a blender and pulsing the mixture. Strain the blended soup and set liquid aside.

In another pot, melt butter and whisk in flour to make a roux. When the roux is golden brown, slowly whisk in blended tomato liquid. Add half and half and salt to taste.

Goes great with garlic croutons!

    I loved this cooked soup. I also have just put all the stuff in the vitamix and eaten it raw with hot sauce and spices. Sort of like a cross between v8 juice and gazpacho - 9/4/11
