Roasted Garden Soup

Ingredients
6 Ripe Tomatoes, cut in half2 Bell Peppers, Seeded and Quartered2 Large Onions, cut in thick slices4 cloves garlic, peeled1 Can Reduced Fat Low Sodium Chicken BrothCooking SpraySalt & pepperAssorted herbs (optional)
Directions
Preheat oven to 450. Spray large baking pan or sheet with cooking spray. Arrange vegetables on tray. Spray tops of vegetables with cooking spray, season with salt and pepper. Roast for 45 -60 minutes. Transfer to blender or food processor and add can of broth. Blend until smooth.
