Tator Tot Casserole

1 lb. ground turkey, 93% lean1/2 c. onion, chopped1 can cream of chicken soup, 98% fat free1 bag frozen mixed veggies, 10 oz bag1/4 c. reduced fat finely shredded cheddar cheese1/2 bag tator tots
Preheat oven to 400. Spray large glass cassarole dish with cooking spray.
In a large skillet, brown ground turkey and onions. When browned, transfer to baking dish. Top ground turkey with frozen veggies, then spread cream of chicken soup on to of veggies. Sprinkle with the cheddar cheese, then top with tator tots. Cover with aluminum foil, bake for 60 minutes. About 10 minutes before baking time is done, remove foil to brown tator tots.
