Zucchini with roasted red peppers and feta

1 cup chopped onion1 tbsp olive oil3-4 cups sliced zucchini2 tbsp water1/2 tsp ground cumin1/2 cup roasted red peppers, cut into stripssalt black pepper2 tbsp crumbled feta cheese
IN large skillet cook and stir onion in hot oil over medium heat about 5 minutes or until tender. Add zucchini, water, and cumin to skillet. Reduce heat. Simmer, covered, for 3-5 min or until zucchini is crisp-tender. Stir in roasted red peppers into mixture. heat through. Season to taste with salt and pepper. Sprinkle with feta cheese.
