Chicken and Pineapple Over Rice

Ingredients
1 c. white rice2 1/4 c. water12 oz. chicken breast, cubed1 can pineapple chunks1 tbsp. corn starch1 tbsp. soy sauce1 tbsp. vinegar
Directions
Drain pineapple, reserving juice in a small bowl. Brown chicken in a non-stick skillet. After chicken is partially cooked, add in pineapple. Continue cooking until pineapple is browned. COok rice in 2 c. water according to directions.

In small bowl, combine pineapple juice, 1/4 c. water, corn starch, soy sauce and vinegar. Pour over chicken and pineapple mixture and cook until thick. Serve over rice

1 serving = 1/2 c. rice and 1 c. pineapple mixture
