Low Calorie Lasagna Roll Ups

Ingredients
Whole Wheat Lasagna, 1 box2 cups Onion, chopped2 cups Green Pepper, chopped2 cups Carrot, choppedFat Free Ricotta Cheese, 2.5 cupGreat Value Fat Free Cottage Cheese, 1.5 cupClassico tomato and basil sauce, 2.5 cup
Directions
Preheat oven to 350.
Boil lasagna noodles.

Combine ricotta and cottage cheeses and blend.
Combine veggies and blend.

Combine all ingredients except sauce.
Lay noodle flat and layer 2 TB of cheese mixture and 2 TB of veggie mixture. Roll up and put into a baking dish. Cover each roll with 2 TB sauce. Cover with foil and bake @ 350 degrees for about 15-20 minutes. Remove foil and bake for another 5-10 minutes.

This recipe makes 18 servings. You can cook less lasagna and do individual servings if you'd prefer.
