Ingredients
1/2 pound lean ground beef2 large stalks of celery, dced1 - 14.5 oz can diced tomatoes1 - 10 oz. can black beans (do not drain)1 - 16 oz can Rosarita traditional refried beans1 - 10 oz can Old El Paso medium enchilada sauceChili powder to tastesplash of lime juice
Directions
Saute ground beef. Add all other ingredients and simmer for at least an hour. Can be spiced up or down by the addition of hot sauce or other peppers, or the exchange of medium for mild enchilada sauce without changing the nutrition content much. Makes about 12 ample half-cup servings.
