Healthified Peach Cobbler

1 cup Bisquick Heart smart mix1/4 tsp. cinnamon1 cup skim milk1/3 cup skim milk1/3 tsp. baking soda3 Tbsp. canola oil3/4 cup Spleanda for baking1 can (29 oz) peach slices in extra light syrup, drained1 tsp. lemon juice Vanilla reduced fat ice cream, if desired (not calculated)
Makes 6 servings
Heat oven to °. In ungreased 8" square (2 quart) baking dish, stir Bisquick and cinnamon. Stir in mmilk and oil with wire whisk or fork until blended.
In medium bowl, mix Splenda, peaches and lemon juice. Spoon over batter in baking dish.
Bake 40-45 minutes or until golden brown. Serve warm with ice cream.
NOTE: If fresh peaches are available, use 4 cups sliced peeled peaches instead of the canned ones. Or, you can use a 16 oz. bag of frozen sliced peaches, thawed.
