Chicken in Soy over Brown Rice

4 1lb. chicken breast (boneless, skinless)1 clove garlic1/2 C. chopped raw onions4 oz. chicken broth8 tbsp. low sodium soy sauce8 C (cooked) instant brown rice
Cut chicken breasts into cubes. Add about 1/2 chicken broth, onions & garlic into pan and cook for about 5 minutes. Add chicken cubes and soy sauce. Cook until chicken is totally cooked. You can make the instant rice whenever is convenient. I usually make it while the chicken is cooking.
Each serving is about 1/2 C of chicken mixture over 1 C of cooked rice.
