Black Bean Salsa with Citrus Dressing

Ingredients
* 2 (15-ounce) cans black beans, rinsed and drained * 1 (6.1-ounce) can mandarin oranges, drained * 1/2 small red onion, chopped * 1 large green bell pepper, chopped * 1 cup frozen whole kernel corn, thawed * 1 tablespoon chopped pickled jalapeņo pepper * 1/4 cup canola oil * 1/4 cup red wine vinegar * 1/3 to 1/2 cup orange juice * 1/4 teaspoon salt
Directions
Stir together first 6 ingredients. Whisk oil and next 3 ingredients. Drizzle over bean mixture, and toss.

Yield: 8 cups

*Good served with Multigrain Tortilla Chips
