Mads' Magnificent Black Bean Soup

2 tbsp. olive oil3 medium-sized cloves garlic1 small-ish spanish onion, chopped3 (15 oz.) cans black beans3-4 cups of of vegetable broth1 tsp. cumin1 tsp. dried oregano1/2 tsp. thymeHabanero sauce to tasteSalt to tasteLow Fat Sour Cream, optional
Saute the garlic and onions in the olive oil with a heavy pinch of salt until the onion is transparent.
Add the black beans, herbs, hot sauce; stir to coat.
Add enough broth to come up an inch or so over the beans. Simmer for 45 minutes.
Puree the soup with your stick blender for a thick, creamy texture. If it's too thick, add a little more broth or water.
Serve with a dollop of low fat sour cream and a big piece of corn bread!
