Arroz Con Mariscos (Rice with shellfish) w/Guacamole Salad

3 cloves of garlic12 medium to large shrimp15 small bay scallops2 tspn fajita seasoning1/4 cup of raw onions1/4 cup of red bell peppers1/4 cup of yellow bell peppers1.5 tbsp of guacamole2 tbsp of sour cream 1/4 cup of shredded lettuce1/4 cup of diced tomato1 jalapeno pepper, chopped4-6 tortillas1 cup of white rice, cooked.25 cup of shredded cheese
1. season shrimp and scallops with fajita mix and garlic
2. saute shrimp and scallops mixture in pan using non stick spray
3. saute onion and peppers in pan using non stick spray
4. take cook riced and mix with 1 tbsp of sour cream
5. top rice with cheese and melt
6. layer sauted shrimp/scallops onto rice
7. place sauted onions and peppers next to shrimp/rice mixture
Guacamole Salad
1. take guacamole and mix with 1 tbsp of sour cream
2. add chopped jalapeno
3. add diced tomato
4.layer on top of shredded lettuce
Serve with tortillas
