Bananas Foster Stuffed French Toast

3 tbsp Butter1/4 Cup Brown Sugar3 tsp Ground Cinnamon3 Medium Bananas4 oz Cream Cheese1 Large Fresh Egg1 Cup Nonfat Milk1 tbsp Vanilla Extract8 Pieces French Toast Bread2 tsp powered sugar1/4 cup maple syrup
Melt butter in sauce pan, add brown sugar and 1 tsp ground cinnamon and mix until sugar is melted and becomes a sauce. Add bananas and cook for 5 minutes until bananas are soft and covered in sauce. Let cool. Add cream cheese and mix well until bananas are mashed and cream cheese is mixed together. Cut your bread to create a pocket. Spoon in banana mixture into the pocket. In a seperate bowl, add eggs, milk, vanilla extract and ground cinnamon and beat well. Dip stuffed bread into egg mixture covering both sides of bread. Spray a wire rack with nonstick spray and put the rack on a baking sheet. Put the stuffed french toast on the rack and back in oven at 350 degrees for 25 minutes or until golden brown. Dust with powder sugar and maple syrup. Makes 8 pieces.
