Italian Chicken, Brown Rice, and Lentil

3/4 cup dry brown rice3/4 cup dry pink lentils3 cubes chicken bouillon2 cups water1 cup tomato or pasta sauce2 tbsp minced garlic3 average boneless, skinless chicken breast, cubed1 medium onion, chopped1 cup mushroomsItalian herbs to taste
Chop and prepare veggies and chicken; mix all ingredients together in pot. Bring mix to boil then lower heat and allow to simmer 25-30 minutes, until done.
Approx eight half-cup servings.

We made this recipe and substituted wild rice for half of the brown rice and it was quite tasty. (But remember the wild rice requires longer to cook.) He also used some leftover pre-cooked chicken breasts and added near the end.This is an easy recipe and will likely be used many times in the future. - 12/26/09
