Chicken Enchilada's Gluten Free

Ingredients
corn tortilla/La Victoria Enchilada Sauce/corn tortillas/green bell pepper/red bell pepper/cheeder cheese/Optional seasonings/cumin/chili pepper/salt/black pepper
Directions
Cut veggies into thin strips
Spray pan with Pam
Saute veggies in pan until soft, approx 5-10 minutes.
Season to taste
Remove veggies
Butterfly chicken, cut into thin strips
Respray pan with Pam
Cook chicken until brown
Add veggies back to pan
Add small amount of mixture to warmed tortilla
Roll and place into glass dish
Continue until mixture is gone.
Top with enchilada sause and grated cheese
Makes Approx 16 tortillas
