Any size zuchinni. This is a great way to get rid of your monster zuchinnis!
Clean zuchinni and cup off the ends. Split and half and scoop out seeds. Using a potato peeler, peel the zuchinni into strips or "noodles." The green skin makes the best noodles :D Saute or steam until done, then drain. Use as the base for any kind of sauce. Spice as desired. Delicious, easy, and a great way to use heaps of zuchinni!
