Spinach Manicotti

Ingredients
12 manicotti shells or large shell pastaCooking Spray2/3 cup chopped onion1/4 cup egg substitute1 1/2 cups ricotta cheese, part-skim3 Tbl parmesan cheese, reduced fat1/4 tsp fresh ground pepper10 oz cooked spinach3/4 cup shredded six cheese italian, divided2 Tbl garlic powder, divided1 1/4 cup chopped cooked spinach, drained well1 tsp italian seasoning1 1/2 cup Classico pasta sauce
Directions
1. COOK pasta for the minimum amount of time, as directed on package (the pasta should be just barely done). Drain and allow to cool slightly.

2. IN a seperate pan, heat a pan over medium heat. Spray with cooking oil and cook onions until translucent ,2-4 minutes.

2. TO make filling, stir together egg substitute, ricotta, parmesan, onion, pepper, 1 Tbl of garlic powder, spinach and half of the 6-italian cheeses.

3. POUR 1 cup of the pasta sauce into a shallow baking dish.

4. STUFF shells with filling, place in dish, top with remaining sauce, sprinkle with remaining tablespoon of garlic powder and follow with the rest of the cheese.

5. BAKE at 425 degrees for 12-15 minutes or until the cheese melts.

One serving equals 2 shells.
