Healthy Banana Bran Muffins

Ingredients
1 1/2 c. Bran Flakes1 t. vanilla extract1 egg1 egg white1/3 c. quick oats1 t. cinnamon2/3 brown sugar1 c. skim milk3 ripe bananas mashed1 1/4 c. whole wheat flour1 t. baking soda1 t. baking powder1/4 t. salt1/2 c. chopped walnuts
Directions
Makes 12-18 muffins

Preheat oven to 375 degrees

Mix bran, oats, and milk--let stand for 10 minutes

Mix bananas, eggs, cinnamon, brown sugar, and vanilla

Add bran mixture to above mixture

Sift flour, baking soda, baking powder, and salt

Fold in walnuts

Pour into greased muffin pan or use paper liners

Bake for 20-25 minutes or until toothpick comes out clean

    Really good muffins! Just what I was looking for. Added a bit of flax seed to top of each before baking. Similar in taste to the Blue Menu bran muffins. Very moist. Will definitely make again! - 6/15/11
