Tomato & Zucchini Veggie Dish

Ingredients
3 c. chopped zucchini (cube them w/ skin on!)3 c. halved cherry tomatoes1 small onion (quartered)2 Tbsp. margarine1 clove garlic, minced1 tsp. saltpepper to tasteoregano to taste
Directions
O.k. Two different ways to make this...The easiest and BEST way is to throw it all together into a foil packet and cook it on the grill for 15-20 minutes until the zucchini and onions are tender.
On the stove top:
melt margarine in a sauce pan on med/hi heat. sautee the garlic and onion until tender. Add the zucchini...Cook until tender...about 15 minutes. Add the cherry tomato halves, the salt, pepper and oregano (about a Tbsp. chopped fresh or dry). Cook an additional 5 minutes until heated thru. Serve and enjoy!!
