Mom's Creamed Tuna on Toast

Ingredients
1-2 regular-size can tuna canned in water (1 in recipe calculator)1 package of frozen peas (10 oz. in the recipe calculator)8 slices of whole-wheat bread3 tablespoons of butter3 tablespoons (about 1/4 cup) flour1 1/2-2 cups (1 3/4 c in the recipe calculator) milkSalt and Pepper to taste
Directions
Serves 4-8 (makes 8 pieces of toast with sauce, calculated for 4)

1. Make a roux. Melt the butter in a saucepan over medium heat. When the butter is bubbling, add the flour and whisk quickly until the flour is dissolved. Let the roux bubble for a minute, whisking frequently to avoid burning, then add the milk (if you wish to avoid lumps, you should heat the milk first in a microwave, but I usually add it cold) and whisk all the while. Cook until the sauce is bubbling, then add salt and pepper to taste.
2. Toast the bread.
3. Add the peas and tuna to the sauce, then cook over a medium heat until the peas and tuna are thoroughly heated, about five minutes.
4. Arrange the toast on your plates and top with the sauce, and serve.
