3 large eggs1 c. canola oil2 1/2 c. sugar2 c grated, peeled zucchinni3 tsp vanilla extract1/2 cup chopped pecans3 c whole wheat flour1 tsp salt3 tsp cinnamon1 tsp baking soda1/4 tsp baking powder
Grease and flour loaf pans or muffin pans or use muffin papers. Preheat oven at 325 Degrees.
Beat eggs, add rest of ingredients. Pour into the loaf pans or muffin pans Bake at 325 degrees for 1 1/2 hours.
If you do muffins only bake for 18-20 min
