2 tbsp canola oil1.03 Pounds skinless chicken breast (trimmed)1/2 yellow (or any color) bell pepper-diced1/2 onion dicedChili Powder to tasteCombine ingredients into a bowl and let marinade in fridge 2-6 hours, depending on if you're home all day or out all day.Can be used in any mexican dish made with chicken, or eaten plain if low-carb
