L.R. Oatmeal chocolate chip cookies

2 cups rolled oats1 cup whole wheat flour1 tsp. cinnamon1/2 tsp. baking soda1/2 tsp. baking powder1/2 tsp. salt1/2 cup tahini or peanut butter1/2 cup butter, softened1 cup brown sugar2 large eggs1 T. vanilla1 cup dark chocolate chips1 cup coconut
Preheat oven to 375.
In a bowl, combine all the dry ingredients. In a mixing bowl, beat together the tahini and butter. Add sugar and beat well for another minute or two. On low speed beat in the eggs and vanilla just to mix. Stir in the dry ingredients. Stir in chocolate chips and coconut. Drop by small cookie scoopfuls onto lightly greased baking sheets. Wet fingers and flatten. Bake for about 12 minutes or until just done. Makes about 41 cookies.
