Spanish Rice Casserole

1 C Uncooked Brown Rice1/2 C Carrots thinly sliced1/2 C Celery, thinly sliced3 Cloves Garlic minced1 Can Rotel Tomatoes1 Can Black Beans12 oz Cooked Chicken Strips3 Tbls Extra Virgin Olive Oil
1. Prepare rice according to package directions
2. Meanwhile slice vegetables and mince garlic
3. In a large skillet, heat olive oil over medium high heat. When hot, saute carrots, celery and garlic until tender. Then add tomatoes and black beans, do not drain juices. Bring to simmer. Add chicken, reduce heat and simmer until all ingredients are hot.
4. When rice is done cooking, add rice to the chicken and vegetable mixture.
Optional: Top with sour cream and sharp cheddar cheese
