L.R. Peanut Butter Oatmeat Chocolate Chip Cookies

120 g (1-1/2 cups) old-fashioned rolled oats110g (1 cup) oat bran60g. (1/2 cup) whole wheat flour1 tsp. cinnamon1/2 tsp. baking soda1/2 tsp. baking powder1/2 tsp. salt1/4 cup butter1/2 cup Skippy Natural peanut butter140g. (1 cup) sucanat or brown sugar2 large eggs1 T. vanilla1 cup Hershey's special dark chocolate chips80g. (1 cup) coconut
Combine dry ingredients in a bowl; set aside. In a large mixing bowl, beat together the butter and peanut butter. Add sucanat and beat for 1 or 2 minutes. On low speed and eggs and vanilla. Beat just to mix. Stir in dry ingredients. Stir in chocolate chips and coconut. Drop by cookie scoopfuls onto lightly greased baking sheets. Bake at 375 for about 10 minutes or until just done. Makes about 37 cookies.
