Lentil and Bulgar "Stew"

Ingredients
1 medium onion, chopped1 clove of garlic, pressed or chopped2 large stalks of celery, chopped1 cup carrots, chopped4-1/2 cups water1-1/4 cups dry lentils1 bay leaf1 Tbsp garam masala1 can pureed pumpkin3/4 cup coarse bulgar1 10-oz pkg frozen spinachsalt and pepper to taste
Directions
Heat oil over medium heat in 3-quart saucepan. Add onions and saute for 5-10 mins. Add garlic, celery, and carrots sauteing until they begin to brown. Add water, lentils, bay leaf, pumpkin, and garam masala. Bring to a boil, then reduce heat to low and simmer covered for 20 mins. Add bulgar and cook about 20 mins. Add salt and pepper to taste and water to desired thickness. Add spinach and simmer for 5-10 minutes. Divide into 6 servings.
