Kale Soup

3 slices bacon, cut up6 cups chopped onion6 cups water8 cups chopped and trimmed kale2 links of sausage (I used an organic pork sausage)4 cups chopped potatoes2 cups kidney beans (I cooked my own - got to lower the sodium content)1 tsp vinegar1/4 tsp black pepperDash of hot sauce (did not include in calculations)1/2 tsp salt (optional - not in nutritional calculations)
In soup pot, cook bacon and onions until onions are tender. Add water, kale and sausage. Bring to a boil and then reduce heat. Simmer for 15 minutes.
Add potatoes and kidney beans. Return to a boil and cook for 15 minutes. (Add more water as needed - original recipe included kidney bean water - no way was I doing that).
Stir in vinegar, pepper andhot sauce. Simmer for 30 more minutes.
