Broiled Pecan Peaches

1 large peach or nectarine (the riper the better for the juice) (could also use light canned peaches)1/4 C. pecans, chopped finely in blender or food processor (almonds or walnuts will also work well)Olivio spray or lowfat margarine or butter1/2 tsp cinnamon1 - 2 Tbsp brown sugar Diabetisweet
Slice peach and place in single layer in broiler-safe pan
Spray lightly with Olivio or dot lightly with margarine or butter
Sprinkle with chopped nuts
Mix cinnamon and sugar substitute in a separate cup until well blended, then sprinkle on top
If using Olivio, spray again lightly (if using margarine or butter, leave alone)
Place in broiler, fairly far away from burner, for about 5 - 10 minutes, tossing one time during this time to ensure even cooking of peaches and to avoid over-browning the nuts in any one place
Serve hot, with a dollop of fat-free, sugar-free cool whip.
