Chicken Salad

Ingredients
1 chicken breast, skinless boneless2 cups chicken stock or broth1 tbsp mayonnaisse1 tbsp mustard1 dash Tabasco sauce1 wedge of lemon
Directions
Poach the chicken breast in the chicken broth for 15-20 minutes. Remove from broth and SHRED chicken.


When chicken has cooled, add mayo, mustard, tabasco, and lemon juice. Mix well to combine. If the mixture seems dry, add a tablespoon of the poaching stock to the salad.

This is delicious served over green salad, on crackers or on whole grain bread.
