Supreme Pizza Salad

Ingredients
2 TB tomato paste2-3 springs fresh oregeno, sinfely minced1/4 c red wine vinegar2-3 TB olive oil1 cup sweet onion, finely chopped12 oz part skim mozarella cheese, cut into 1 cm cubes6 slices Canadian bacon, cut into pite-size pieces2-30 slices turkey peperoni1 small can sliced black olives1 cup sliced fresh mushrooms2 Red or green peppers, cut into bite-sized pieces5 leaves basil, finely choppedSalt and pepper to taste
Directions
Whisk the tomato paste, oregano and vinegar together in the bottom of a large bowl. Slowly drizzle in the olive oil until you reach a pizza-sauce-like consistancy.

Add the onions and cheese and stir to coat.

Add the remaining ingredients and mix well.

    I love this recipe! Add Romaine Lettuce to this to make it a truly phenomenal salad and if you take some pizza dough and roll it out VERY thin sweep some evoo over top w/ parmesan cheese & oregano/rosemary and bake till crispy. Crumble to croutons and add as well! - 6/1/10
