Jerk Spiced Shrimp

Ingredients
peeled and deveined large shrimp (1 1/2 lb.)sugar (1 T) (I substitute splenda for sugar)paprika (1 T)salt (1/2 t)garlic powder (1/2 t)ground red pepper (1/2 t)ground thyme (1/4 t)ground allspice (1/8 t)olive oil (2 T)cooking spray
Directions
* Prepare grill to medium-high heat.

* Combine all dry ingredients. Combine oil and shrimp in a large bowl; toss well to coat. Sprinkle spice mixture over shrimp; toss to coat. Thread shrimp evenly onto (8 inch) skewers. Place skewers on a grill rack coated with cooking spray; grill 6 minutes or until done, turning once.

Serves 4 (2 skewers each serving)

    This is delicious; I used the same recipe from Aug. 09 Cooking light and love it. I serve it over mixed greens with a chunky mango/avocado salsa on top. - 10/23/09
