Garlic Chicken with Balsamic Vinegar

8 skinless chicken breastssalt & pepper4 cloves garlic—chopped1 cup white onion, chopped3-4 Tbsp. extra virgin olive oil1/2 cup balsamic vinegar4 Tbsp. water
1. Season chicken with salt and pepper. Chop garlic. Heat oil in large pan; add chicken
and cook turning once until browned and cooked through. Move to a plate.
2. Leave the drippings in pan. Add garlic and onion to pan. Cook until softened (about 1 minute).
Add vinegar and water, bring to a boil, a. Boil until the vinegar begins to reduce, about 5 minutes.
3. Return chicken to pan and simmer for 1 minute. Plate and serve.
