Tofu scramble with multi-colored veggies

Ingredients
Tofu, firm, 1 block Olive Oil, 2 tbspBroccoli, frozen, 1 package (10 oz) Sweet potato, 1 cup, cubes Yellow Sweet Corn, Frozen, 0.5 cup kernels Seasonings:Salt, 1 dash Pepper, black, 1 tbsp Garlic, 2 cloves Optional:Parmesan Cheese, shredded, 3 tbsp
Directions
Crush/grate the garlic cloves. Heat the olive oil in a pan, and sautee the garlice.

Crumble and add the block of tofu, and the veggies.

Sautee/let brown for 10-15 minutes. Add salt and pepper as needed.

Serve in thirds - great for re-heating!

Add parm. cheese as needed/desired.
