Curry with Apples and Chicken

1.5 TBSP butter1 medium onion chopped1 medium apple peeled, cored and chopped1 3/4 TBSP all purpose flour1.5 TBSP curry powder8 oz chicken breast -boneless skinless raw and cut into bite size pieces.5 cup chicken broth.5 cup milksalt and pepper to taste
Preheat oven to 350 degrees F
Saute onion and apple in butter until tender. Add curry powder and saute 1 minute longer. Add flour and cook for 1 minute. Add chicken broth and milk. Stir well.
Season chicken pieces with salt and pepper and lay in a single layer in a 9x13 glass casserole dish. Pour apple mixture over chicken and bake for 45 minutes or until chicken is cooked through.

Thank you for this recipe. I was looking for a low cal curry dish and this fits the bill. It was delicious. I substituted the 1.5 TBSP curry powder with 1 TBSP curry powder and .5 TBSP ground ginger and it came out perfect. Since I am the only who likes curry, I have enough for three more meals. - 10/8/09
