Diane's Chicken Salad

Ingredients
Chop everything up small. I use just enough mayo to hold it together since I'm counting calories and fat grams. You could use light mayo but I prefer the flavor of real mayo and use it sparingly.I served this on a bed of lettuce (very pretty) and also packed it on sandwiches in the kids' lunches.Adding bits of crispy turkey bacon adds a nice flavor to it as well. You can substitute apricots for the apples.
Directions
I put the chicken in the crockpot the night before and took skin off. No real cooking time required since I didn't stand over it.

This makes about six servings.
