Flourless Chocolate Cake

Ingredients
6.4 oz. of good quality semi-sweet chocolate4 T. butter2 eggs1 tsp vanilla extractpinch of salt
Directions
Melt butter, chocolate, and vanilla in a double broiler or a bowl set on top of a sauce pan of simmering water making sure water does not touch bowl stirring frequently. Whisk eggs and a pinch of salt with an electric mixer until tripled in size. Fold chocolate mixture into egg mixture until fully encorporated. Pour into mini-souffle cups on a cookie sheet. Bake at 375 for about 12 minutes. Top with whipped cream or powdered sugar if desired.
