Potato Salad

Ingredients
2 Hard boild eggs (1P)1 med. baked potato (approx 1/2 cup) (1S)FF Mayo 1 tsp (1Ft)1 green onion chopped (1/4 V)1/2 cup cucumber diced (1/2 V)a dash of black pepper
Directions
dice potatoes and bake in the oven for approx. 20 minutes @ 425F
slice eggs, and mix with veggies, add potatoes when done, sprinkle with pepper and chill.

(my kids said it was awesome!)
