4 T Butter3/4 Cup Chopped Onion2 Cans Mixed Vegetables2 14 oz. Chicken Broth1 20 oz. White Kidney Beans (Cannelini)1 14.5 oz. whole tomatoes1 12.5 oz. stewed tomatoes1 Package Frozen Chopped Spinach2 T. tomato paste1/4 t. garlic powder2 t. chopped parsley1 t. salt1/4 t. pepper1/2 t basil1 14.5 oz Can Garbanzo Beans3/4 Cup Elbow Macaroni1/4 Cup Parmesan Cheese
Saute onions in butter. Add all other ingredients except for garbanzo beans, macroni and parmesan cheese; cook for 1.5 hours. Use stick blender until chosen consistency. Add macaroni, garbanzo beans and parmesan cheese; cook 15 minutes more.
