Basic Hummus made with Zahtar or Za’atar (Middle Eastern Spice) [1/4 c servings]

1 1/2 tsp EVOO2 Tbsp chopped onion1 clove garlic, minced1/4 cup minced fresh parsley2 tbsp Zahtar or Za’atar (Middle Eastern Spice) or to taste can be found at Middle East food markets1 1/2 cup cooked garbanzo beans or Great Northern beans or black beans (drained and rinsed if using canned...15 oz. can= about 1 1/2 cups)...or any combination of each.1/4 cup Tahini3 tbsp fresh lemon juiceYou may need to add 1 to 2 tablespoons of water to thin.GARNISH (optional):Lemon WedgesCherry TomatoesFresh Parsley Sprigs
Makes about eight 1/4 cup servings.
1) In a small skillet, heat oil; saute onion and garlic until onion is softened. Add parsley and seasonings. Stir just long enough to soften parsley.
2) In food processor, combine beans, tahini and lemon juice; process until smooth. Stir in onion/garlic/herb mixture. Add additional water, if needed. Taste and add more Zahtar or Za’atar (Middle Eastern Spice), to taste. Process again.
3) Spoon into serving bowl. Top with garnish if desired.
