Savory Rosemary Potato Salad

Ingredients
2.5# of red potatoes, washed & quartered1 tablespoon rosemary, choppedolive oil - 2-3 tablespoonsa few pinches of salt, ground black pepper3 eggs, hardboiled, large dice1 T coarse style country mustard1/4 cup or so canola or olive oil mayo
Directions
Parboil the potatoes until just tender. Heat the olive oil in a skillet over medium/high heat and saute the potatoes with the rosemary, salt & pepper until the potatoes get a little crisp and golden. In a large bowl, mix the potatoes, diced hardboiled eggs, mayo & mustard. Taste & readjust the salt/pepper/extra rosemary as needed.
