Ingredients
2 tbsp Sunflower oil2 carrots, finely chopped 1 small onion, finely chopped 2 rib celery, finely chopped 1 tsp garlic, minced 1 tsp dried basil 1 tsp cumin1/2 tsp tumeric1 tsp thyme1 tsp oregano5 Cups Water2 Bouillon Cubes1 small can tomato soup1 28 oz can diced tomatoes 1 cup uncooked Rosa Marina orzo 2 tbsp sugar freshly ground black pepper, to taste1 tsp salt, or more to taste Chopped Parsley to garnish
Directions
Heat oil in a heavy bottom large pot, add onions, carrots and celery and cook until soft. Add garlic and spices to release aroma. Quickly add water, can of soup and tomatos. Bring to a boil and reduce heat to a simmer. Cook for 30-45 minutes until all vegetables are tender. Add orzo and sugar. Cook 8-10 minutes until pasta is tender. Add salt and pepper to taste and parsely at the last minute.
