GF Double Chocolate Biscotti

2 cups all purpose gluten free flour1/2 cup sugar1 tsp baking soda1/8 tsp salt1/4 cup cocoa powder (unsweetened)1/3 cup mini chocolate chips2 eggs2 egg whites1 tsp vanilla1 tbl milk (1%)
Makes 24 pieces.
Preheat oven to 350.
Combine first 6 ingredients in a bowl.
Combine eggs, egg whites, vanilla and milk in a separate bowl. Beat with fork.
Add egg mixture to flour mixture and mix. Dough may be slightly sticky, so oil your hands with a bit of olive oil before you knead.
Knead dough for 8 to 10 minutes, and form into a 16" oval roll that is 1.5" in the centre.
Place on a lightly greased baking sheet and bake in the oven for 30 minutes.
Cool on a wire rack and cut, slightly on the diagonal into 24, 1/4" slices.
Reduce heat to 325 and bake, cut side down for 10 minutes.
Turn cookies over and bake for an additional 10 minutes.
Remove and place on wire rack to cool.
