Homemade Cheese Manicotti

1lb. whole wheat pasta dough2 cups whole milk ricotta cheese2 cups fresh spinach, chopped3 oz. mozzarella cheese1/4 cup parmesan and pecorino romano cheeseChopped flat leaf parsleySalt and pepper to taste
-Mix cheeses, spinach, and spices together.
-Roll pasta into thin sheets using a pasta roller.
-Cut into 5 in. squares and boil them for 2 minutes.
-Place a row of filling on one side of a square and roll up into a tube. Place seam side down on a baking sheet.
Makes 16 manicotti.
-Put the desired number of portions in a baking dish and top with sauce. Cover loosely with foil and bake 40-45 minutes.
