Pork Potstickers

1 lb ground pork1/2 cup onion, minced4 large scallions, sliced thin4-5 cloves garlic, minced1 ' piece ginger, minced1/2 box silken tofu2 tsp salt2 tsp pepper1 tbsp thai chili sauce2 tbsp light soy sauce2 tbsp sesame oil35-40 wonton wrappersSesame oil for pan frying
Saute garlic, onions and ginger until soft. Cool. Mix in with other ingredients. Set in fridge for 30 minutes so flavors can marry together. Fill each wonton wrapper with 1- 1 1/2 tbsp pork mixture. Fold into triangles. Seal edges with water. Place potstickers in a hot saute pan with sesame oil over medium high heat. Cook for 2 minutes. Get pan lid ready and pour in 3/4 cup water into the pan. Close immediately so you dont get splashed with oil. Steam for 5-6 minutes and remove. Repeat with rest of the potstickers. When all are finished, place back into the pan with a little sesame oil and cook until crispy on the bottom. Serve with jasmine rice and steamed vegetables.
