Vanilla Oatmeal Cookies

0.75 c. unsweetened applesauce0.5 c. light butter1 egg and 1 egg white1-2 tbsp vanilla extract2 c. quaker old-fashioned oats2.75 c. whole wheat flour10 tsp baking soda (or substitute baking powder)
Mix together applesauce, butter and brown sugar until well-blended. Add egg/egg white and vanilla extract and mix. Slowly stir in oats. In separate bowl, combine flour and baking soda. Slowly stir in flour/baking soda mix into liquid mix. (The mix will be thick!). If you'd like to add chocolate/vanilla chips (I used vanilla) or nuts, do so now.
Spoon out cookies (~1 tbsp) onto ungreased cookie sheet. Bake at 350 for 11-13 minutes or until edges of cookies brown. Let cool and serve.
